CHICKEN COLUMBIA

- 2 green tip medium bananas, peeled shopping list
- 2 TBLsps. vegetable oil, divided shopping list
- 2 whole chicken breasts, split, boned shopping list
- 2 cloves garlic, minced shopping list
- 2 TBLsps. minced gingerroot shopping list
- orange peel strips shopping list
- 1/2 cup orange juice shopping list
- 1/2 cup water, divided shopping list
- 2 TBLsps. chopped chutney shopping list
- 2 tsps. cornstarch shopping list
How to make it
- Cut bananas in half crosswise, then lengthwise, Saute bananas in one tablespoon oil 30 to 45 seconds, shaking skillet. Remove from skillet. Add one more tablespoon oil to skillet. Brown chicken on both sides in hot oil. Add garlic and gingerroot; saute. Stir in orange peel and juice, 1/4 cup water and chutney. Cover, simmer 20 minutes. Mix cornstarch and remaining 1/4 cup water; stir into pan juices. Cook until sauce boils and thickens. Top chicken with bananas. Generously spoon sauce over all.
