How to make it

  • Combine cream cheese, lemon rind, pecans, dates and sour cream.
  • Put in refrigerator for an hour. Chill peaches also if desired.
  • Just before taking filling out of refrigerator, sprinkle coconut in a shallow pan and place in oven to toast, watching carefully because cocnut burns quickly!
  • Lay lettuce leaves on serving platter or individual plates.
  • Drain peaches and place on lettuce leaves.
  • Remove filling from refrigerator, then spoon into peach halves, dividing equally among the peach halves.
  • Sprinkle with toasted coconut and serve.
