Date Stuffed Peaches

- 19 ounce can peach halves, drained shopping list
- 3 ounce package cream cheese, softened shopping list
- 1 tsp grated lemon rind shopping list
- 2 Tbsp chopped pecans shopping list
- 3/4 cup chopped dates shopping list
- 1/2 cup sour cream shopping list
- toasted coconut shopping list
- lettuce leaves shopping list
How to make it
- Combine cream cheese, lemon rind, pecans, dates and sour cream.
- Put in refrigerator for an hour. Chill peaches also if desired.
- Just before taking filling out of refrigerator, sprinkle coconut in a shallow pan and place in oven to toast, watching carefully because cocnut burns quickly!
- Lay lettuce leaves on serving platter or individual plates.
- Drain peaches and place on lettuce leaves.
- Remove filling from refrigerator, then spoon into peach halves, dividing equally among the peach halves.
- Sprinkle with toasted coconut and serve.
