LEMON MINT ICED TEA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Atkinson Estate in Garland, Texas in 2001.

Ingredients
  • 3 cups boiling water
  • 6 tea bags
  • 1 teaspoon chopped fresh mint
  • 3/4 cup granulated sugar
  • 3 cups cold water
  • 1/2 cup fresh lemon juice
  • Ice cubes
  • Lemon slices for garnish

Directions
  1. Pour boiling water over tea bags and mint then cover and steep 5 minutes and strain.
  2. In a large pitcher combine tea and sugar then stir well to dissolve sugar.
  3. Add cold water and lemon juice then cool and serve over ice in tall glasses.
  4. Garnish with lemon slices.
