Zubirant Fresh Tomato Basil Pasta With Pecans Recipe
ZUBIRANT FRESH TOMATO BASIL PASTA WITH PECANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Love Estate in Sachse, Texas in 1984.

Ingredients
  • 1-1/2 cups tomatoes diced
  • 1/4 cup fresh basil chopped
  • 1/2 cup freshly grated parmesan cheese
  • 1 cup pecan pieces
  • 10 ounces uncooked pasta
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cook pasta then drain well and toss with olive oil.
  2. While still warm add tomatoes, basil, parmesan and pecans then stir well.
  3. Season with salt and pepper and serve warm.
