How to make it

  • Preheat oven to 350°
  • Line baking sheets with parchment or wax paper
  • Combine the butter, sugar, syrup, eggs, and extracts until smooth and then add flour, baking powder, and salt. The dough will be wet, but don’t worry. Drop dough onto baking sheets. I used a baby spoon because I wanted tiny cookies, but you can use a teaspoon and make larger cookies, if you wish.
  • Bake for 9 - 11 minutes until the edges just start to turn light brown.
  • While the cookies are cooking, make the frosting. Combine all the remaining ingredients with an electric mixer until smooth. Easy peasy!
  • Once the cookies are cooled, put a dollop of frosting (depending on the size of your cookie) between two cookies and smoosh. (That is a uh, technical baking term. Don’t look at me like I’m crazy!) I tried to put this icing in a piping bag with a large star tip, but it is just way too thick.
