Energy Bites Recipe
These are fast to make and a great thing for me to keep with me when I'm out. I'm not supposed to get hungry so these keep from buying junk food. Another foodie, eyecook, has a similar recipe that looks good: energy balls.

Ingredients
  • 1/2 c. raisins
  • 1-3/4 c. chopped dried figs
  • 1 c. chopped organic dried apricots
  • 1 c. chopped pitted dates
  • 1/2 c. crunchy peanut butter
  • 1/2 c. mini chocolate chips
  • 1/2 t. cinnamon
  • 1/2 c. dried unsweetened coconut or cocoa powder

Directions
  1. Put raisins in a bowl; cover with boiling water and soak til plump (10 minutes or so)
  2. Remove raisins from water and transfer to food processor bowl (save water)
  3. Add figs, apricots and dates. Process til finely chopped (about 1 minute)
  4. Remove to a bowl and stir in peanut butter, chocolate chips and cinnamon.
  5. If too dry, add up to 2 T. of the raisin-soaking liquid.
  6. Roll into one inch balls with wet hands.
  7. Roll in coconut or cocoa.
