Energy Bites

- 1/2 c. raisins shopping list
- 1-3/4 c. chopped dried figs shopping list
- 1 c. chopped organic dried apricots shopping list
- 1 c. chopped pitted dates shopping list
- 1/2 c. crunchy peanut butter shopping list
- 1/2 c. mini chocolate chips shopping list
- 1/2 t. cinnamon shopping list
- 1/2 c. dried unsweetened coconut or cocoa powder shopping list
How to make it
- Put raisins in a bowl; cover with boiling water and soak til plump (10 minutes or so)
- Remove raisins from water and transfer to food processor bowl (save water)
- Add figs, apricots and dates. Process til finely chopped (about 1 minute)
- Remove to a bowl and stir in peanut butter, chocolate chips and cinnamon.
- If too dry, add up to 2 T. of the raisin-soaking liquid.
- Roll into one inch balls with wet hands.
- Roll in coconut or cocoa.
