simple,and juicey, this is good stuff i have substatuted catfish for the trout

Ingredients
  • 3 pounds of trout or sea bass or catfish or brim
  • creole seasoning emerill lagasse or tony chacheres
  • 3 tbl olive oil
  • 2 egg yolks, beaten
  • 1 cup melted margerine
  • 2 tbl juice of lemon
  • 1 cup cooked chopped shrimp
  • 1/2 cup cooked crab meat
  • 1/2 cup sliced mushrooms

Directions
  1. season fish in baking pan and add olive oil.
  2. bake in 375 degree oven for 30 minutes. as fish bakes, prepare sauce.
  3. to make sauce. place egg yolks in top of double boiler over hot, not boiling water and gradually add melted margarine, stirring constantly until mixture thickens. add lemon juice,shrimp,crab meat,mushrooms and seasoning to taste..
  4. stir and cook for about 10 minutes to heat throughly.
  5. place baked fish on a platter and cover with sauce.
  6. yields 6 servings
