Ingredients
  • Take a large pot and put the following into it:
  • 1 Can of Whole Kernel Corn,do not drain
  • 1 Cup of Watermelon Rind,finely chopped up(Remove the green outer skin from the rind and any red flesh on the inside of the rind)
  • 3/4 Cup Sweet Red Peppers,finely chopped
  • 1/2 Cup Sweet Green Peppers,finely chopped
  • 1 Onion,about 2" in diameter,grated as fine as possible
  • 5 teaspoons of Cornstarch
  • 1 teaspoon Black Pepper
  • 1 Pinch of Cayenne Pepper
  • 2 teaspoons Salt
  • 2 teaspoons Sugar
  • 1/2 Cup White Vinegar
  • 1/4 teaspoon Ground Cinnamon
  • 1 teaspoon Coriander Seed

Directions
  1. Add just enough water to barely cover the ingredients.
  2. Bring to a boil and boil for 10 minutes.
  3. Stir the corn starch in well while the mixture is boiling.
  4. Remove and keep what you want for immediate use.
  5. Using a Hot Bath ,can the rest for winter.

What an interesting recipe! Never used watermelon rind before...have to try this!


I love watermelon rind pickle--this relish sounds really good!
