Ingredients
  • 1 pound ground beef, 95% lean
  • 2 cups water
  • 14 1/2 ounces diced canned tomatoes, drained
  • 2 large bell peppers (green, red or yellow), diced
  • 1 medium onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 cups instant rice, uncooked

Directions
  1. In a large skillet, brown beef; drain. Add onions and bell peppers; cook until onions and peppers start to soften. Add tomatoes, water and seasonings; bring to a boil. Stir in rice; reduce heat; simmer, covered, for 2 minutes. Remove from heat. Let stand for 5 minutes. Uncover and stir.
