SUPREME PASTA SALAD This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 pound penne or corkscrew pasta cooked and rinsed with cold water
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 3 carrots sliced
  • 1 can artichoke hearts in water drained and quartered
  • 1 medium red onion diced
  • Dressing:
  • 28 ounce can chopped tomatoes
  • 1 teaspoon dried basil
  • 2 teaspoons garlic powder
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Directions
  1. Place pasta in a large bowl then add vegetables.
  2. Combine all dressing ingredients and mix with pasta and vegetables.
  3. Chill or serve at room temperature.
