Ingredients
  • 10 yukon gold potatoes (31/2lb) 1.75kg
  • 2 onions, sliced
  • 1tsp herbes de Provence or thyme
  • salt and pepper
  • 1/4c butter
  • 1/4c flour
  • 21/2c hot chicken or vegetable stock
  • 1T cidar vinegar
  • TOPPING
  • 1/4c butter
  • 2c coarse fresh breadcrumbs
  • 1/4c chopped fresh parsley

Directions
  1. Peel and thinly slice the potatoes to make about 8cups(2L) Spread half of the onions in the bottom of a greased 12c(3L) oval casserole dish. Top with half of the potatoes then sprinkle with half the herbs and some salt and pepper. Repeat layers.
  2. In a saucepan melt butter and blend in flour. Whisk in stock slowly, cook, stirring for about 5mins. or until thickened; stir in vinegar. Pour over potatoes; Cover and bake in a 375F oven for 1hr and 15mins. or until tender.
  3. TOPPING Melt butter, stir in breadcrumbs and parsley. Sprinkle over casserole. Broil for 2-3 mins until golden.
