Sensational Potato Casserole

- 10 yukon gold potatoes (31/2lb) 1.75kg shopping list
- 2 onions, sliced shopping list
- 1tsp herbes de provence or thyme shopping list
- salt and pepper shopping list
- 1/4c butter shopping list
- 1/4c flour shopping list
- 21/2c hot chicken or vegetable stock shopping list
- 1T cidar vinegar shopping list
- TOPPING shopping list
- 1/4c butter shopping list
- 2c coarse fresh breadcrumbs shopping list
- 1/4c chopped fresh parsley shopping list
How to make it
- Peel and thinly slice the potatoes to make about 8cups(2L) Spread half of the onions in the bottom of a greased 12c(3L) oval casserole dish. Top with half of the potatoes then sprinkle with half the herbs and some salt and pepper. Repeat layers.
- In a saucepan melt butter and blend in flour. Whisk in stock slowly, cook, stirring for about 5mins. or until thickened; stir in vinegar. Pour over potatoes; Cover and bake in a 375F oven for 1hr and 15mins. or until tender.
- TOPPING Melt butter, stir in breadcrumbs and parsley. Sprinkle over casserole. Broil for 2-3 mins until golden.
