How to make it

  • Peel and thinly slice the potatoes to make about 8cups(2L) Spread half of the onions in the bottom of a greased 12c(3L) oval casserole dish. Top with half of the potatoes then sprinkle with half the herbs and some salt and pepper. Repeat layers.
  • In a saucepan melt butter and blend in flour. Whisk in stock slowly, cook, stirring for about 5mins. or until thickened; stir in vinegar. Pour over potatoes; Cover and bake in a 375F oven for 1hr and 15mins. or until tender.
  • TOPPING Melt butter, stir in breadcrumbs and parsley. Sprinkle over casserole. Broil for 2-3 mins until golden.
