Skillet Spinach Recipe
I love to find new ways to serve familiar veggies! This old cookbook I stumbled across is worth it's weight in gold! (Marlboro Country Cookbook "Morning Fires, Evening Lights" (Philip Morris, Inc, 1998).)

Ingredients
  • 2 (10 oz) pkg fresh or frozen spinach
  • 4 tbs butter or margarine
  • 1/2 cup finely chopped onion
  • 2 small cloves garlic, minced
  • 2 (3oz) pkgs cream cheese
  • salt, pepper, nutmeg

Directions
  1. Wash and drain fresh spinach. Melt butter in a large skillet. Add spinach, onion and garlic; cook and stir until spinach is wilted or defrosted and onion is soft.
  2. Cut cream cheese into cubes; add to spinach. Cover and cook until cheese softens, about 5 minutes. Stir to mix, and season with salt, pepper, and nutmeg.
