Ingredients
  • 4 cups diced cooked potatoes
  • 16 ounces garbanzo beans -- drained
  • 1 cup chopped celery
  • 1/2 cup chopped salad olives
  • 2 tablespoons dried parsley flakes
  • 2 teaspoons onion salt
  • 1/4 teaspoon pepper
  • 1 cup mayonnaise
  • 4 hard-cooked eggs -- sliced
  • Paprika -- (optional)

Directions
  1. Combine first 7 ingredients in a large bowl; toss lightly. Add mayonnaise, stirring to coat vegetables. Gently stir in egg slices. Chill thoroughly. Sprinkle with paprika, if desired.
