Just a great recipe to have and enjoy.

Ingredients
  • Preheat oven to 350
  • Butter & flour loaf pan
  • 2 eggs (or egg substitute)
  • 2 c. sugar (I use 1/2 this amount)
  • 1 c. self rising flour
  • 1 c. whole wheat flour (sift together 2 flours)
  • 1 c. unsweetened applesauce (or vegetable oil)
  • 2 c. zucchini, grated
  • 2 t. pure vanilla extract
  • 3 t. cinnamon
  • 1 c. chopped walnuts or pecans
  • 3/4 c. raisins

Directions
  1. Combine all ingredients
  2. Bake for hour or until toothpick comes out clean
  3. Bon Appetit!
