How to make it

  • In a large bowl, whisk together lemon juice, next 5 ingredients
  • Add artichokes quarters and diced pimiento
  • Toss gently
  • Cover and chill overnight
  • Snap off the tough ends of asparagus
  • Cook in boiling salted water to cover for 3 minutes or until crisp-tender
  • Drain asparagus, plunge into ice water to stop the cooking process
  • Place cooked asparagus in a large heavy duty zip-top plastic bag
  • Store overnight in refrigerator, if desired
  • Add asparagus to artichoke mixture
  • Toss gently
  • Cover and chill 2 hours*
  • Garnish with lemon rind strips before serving
  • This dish is beautiful in a white oblong tray or platter
  • *NOTE: Lemon juice tends to discolor and toughen asparagus, so marinating time is limited to 2 hours
