Lemon Marinated Asparagus And Artichoke

- marinade shopping list
- 1/2 cup fresh lemon juice shopping list
- 3 tablespoons olive oil shopping list
- 2 tablespoons sugar shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 1 garlic clove, minced shopping list
- 1 (14-ounce) can artichoke heart quarters, drained shopping list
- 1 (4-ounce) jar diced pimiento, drained shopping list
- 2 pounds fresh asparagus shopping list
- Garnish with fresh lemon rind strips shopping list
How to make it
- In a large bowl, whisk together lemon juice, next 5 ingredients
- Add artichokes quarters and diced pimiento
- Toss gently
- Cover and chill overnight
- Snap off the tough ends of asparagus
- Cook in boiling salted water to cover for 3 minutes or until crisp-tender
- Drain asparagus, plunge into ice water to stop the cooking process
- Place cooked asparagus in a large heavy duty zip-top plastic bag
- Store overnight in refrigerator, if desired
- Add asparagus to artichoke mixture
- Toss gently
- Cover and chill 2 hours*
- Garnish with lemon rind strips before serving
- This dish is beautiful in a white oblong tray or platter
- *NOTE: Lemon juice tends to discolor and toughen asparagus, so marinating time is limited to 2 hours
