How to make it

  • Rinse and dry a bunch of asparagus.
  • Place the asparagus in a gallon sized zip-loc bag and drizzle liberally with olive oil then add your favorite seasoning. (I use red pepper flakes and "mixed-up salt.")
  • Marinate in the refrigerator, overnight if possible.
  • Arrange the asparagus on a cookie sheet and broil in oven, checking often and turning asaragus with tongs.
  • You will know it's done when it looks "done."
  • Serve with a dip consisting of mayonnaise and curry powder. (Just mix curry powder in until it "looks" right.)
  • You really can't mess this up.

    I love curried mayonnaise on roasted asparagus. I can't use the red pepper flakes with the wimps I call family. But I do appreciate the method of cooking. I usually add a bit of lemon juice to my mayonnaise and curry to brighten the flavor just a little bit. Thanks for reminding me of a favorite dish. It will be added to the shopping list.
