How to make it

  • Puree 1 quart of strawberries in container of blender.
  • Add 1/2 cup sugar and process until blended.
  • Soften gelatin in 1/2 cup cold water in a large bowl.
  • Add boiling water stirring until gelatin completely dissolves then cool.
  • Stir strawberry mixture into gelatin then chill until consistency of unbeaten egg white.
  • Beat cream until foamy then gradually add powdered sugar and beat until soft peaks form.
  • Fold whipped cream into strawberry mixture then spoon into lightly oiled mold.
  • Refrigerate until set then remove to serving plate and garnish with strawberries.

    What's very strange is that I started making this recipe, when I was thinking of how to make strawberry mousse earlier today... I had looked up a bunch of recipes but I never saw this one. However, in the end, I sort-of made up my own recipe, following all the others I looked at as a rough guideline... and it pretty much ended up being exactly this recipe, now that I am looking at it, I used 1 quart of strawberies, 2 cups whipping cream, 3 packets of gelatin, but I used more sugar and followed your recipe almost exactly.

    Strange how that happens... anyway it's delicious. Great recipe! My boyfriend said it's "very strawberry".
