This scrumptious munchy was found down in Georga at a great little Mom and pop Diner, we loved it and asked for the recipe.

Ingredients
  • Curried Sweet Potato Salad
  • 1/2 c mayonnaise
  • 2 tsp curry powder
  • 1 tbsp brown sugar
  • 1 tsp ground mustard
  • 4 c diced sweet potatoes, cooked
  • 1/2 c dried cranberries
  • 1/2 c pecan pieces
  • 2 green onions, sliced
  • salt & pepper to taste

Directions
  1. Mix the mayonnaise, curry, brown sugar & mustard.
  2. Add the potatoes, cranberries, pecans & green onions.
  3. Season with salt & pepper.
  4. Chill overnight........this is a MUST.
  5. Bon appetite
