How to make it

  • make your sauce first by cooking onion garlic carrott and fresh tomatos in olive oil until tender
  • add your tomatos sauce and 1 cup water with salt pepper and chopp parsley basil and oregano fine add to tomatos sauce let simmer slowly while we do the rest
  • to make crumbles for chicken put chunckes of day old bread into a food processor until little tinny bites add some grated parm cheese and lemon lest with some peppe too
  • make a breading station with four pans three pie tens or like size pans and one large cookie sheet in the first place your flour with salt and pepper in the second place eggs with milk salt and pepper
  • in the third place your crumbles for chicken
  • get out chicken and cover with lemon juice then go into flour, into egg and back into crumbles then onto cookie sheet, re-peat until all chickne is breaded
  • cook in olive oil over medium-hight heat until you have a dark brown crusty crust, dont worry about chicken being cooked through, we are baking this for a while and will cook through later
  • after chicken is all brown place your tomato sauce in a large baking digh, buttered and put all youe crunchy chicken in the sauce put a huge chuncks of mozerrela cheese and parm, with a little olive oil and pepper on top bake under tin foil for 20 min, then under broiler if your like your cheese crusty and brown,
  • i serve this on top of buttered pasta with lemon juice and lots of crushed red peper flakes!!
  • untimate dinner for me!!
