Grilled Pork Tortilla Wraps And Pineapple Salsa Recipe
Coarsely chopped grilled pork chops and home-made pineapple salsa, fill a warm tortilla and makes a most delicious wrap. So good!

Ingredients
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Ground red pepper to taste
  • Pork rub to taste
  • 6 boneless pork loin chops, trimmed
  • Cooking spray (preferably Olive Oil)
  • 8 inch flour tortillas, warmed
  • PINEAPPLE SALSA
  • 1/4 cup orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 cups chopped fresh pineapple
  • 2-3 tablespoons chopped fresh cilantro
  • 1/4 cup small red onion, chopped

Directions
  1. Combine first 5 ingredients in bowl
  2. Sprinkle over pork chops
  3. Coat the pork chops evenly with cooking spray
  4. GRILL, covered with the lid of grill over medium heat...350-400 degrees, about 3-4 minutes on each side
  5. Check for doneness
  6. Let stand about 10 minutes
  7. Coarsely chop pork
  8. PINEAPPLE SALSA
  9. Whisk together 1/4 cup orange juice and next four ingredients
  10. Stir in pineapple, cilantro and onion
  11. WARM TORTILLAS COVERED IN OVEN....THEY ARE MORE MOIST WARMED IN OVEN
  12. Fill warmed tortilla with chopped pork and pineapple salsa
  13. *NOTE: SLICED AVOCADO MAY BE ADDED TO THE TORTILLA
