All Year Round Summer Squash Soup

- 2 acorn or butternut squash shopping list
- 1 medium onion shopping list
- 2 tsp margarine shopping list
- 4 cups vegetable or chicken broth shopping list
- 1/3 cup 33% cream shopping list
- 1 tsp nutmeg shopping list
- salt shopping list
- pepper shopping list
How to make it
- Cut squash in half, brush with margarine and sprinkle with salt and pepper, bake in oven at 350 for 35 minutes
- scoop away from peel and cube into 2 inch pieces
- in a large pot saute onions in margarine and add squash
- add vegetable or chicken broth
- bring to a boil
- remove from heat and blend in a blender CAREFULLY in 3 small batches with a tea towel on the lid, place in clean pot as you blend
- place back on low heat and add cream, more salt and pepper and nutmeg
- stir, serve and enjoy!
