Pistachio Cupcakes

Toast the nuts in these rich cupcakes for extra flovor,and add pistachio pudding mix for double dose of delicious.

Preheat oven to 350. Line 24 muffin cups with liners. In food processor,gring pistachios;reserve.
On med speed,beat cake mix,11/3 c water,eggs and pudding mix 2 mins. Stir in nuts and if desired,food coloring. Divide among liners. Bake 20-22 mins. Transfer to racks,cool.
Mix frosting and extract'spread over cupcakes. If desired,garnish with chopped nuts.
