Pistachio Cupcakes

- 1/2c shelled pistachios,toasted shopping list
- 1 pkg(18.25oz) classic white cake mix shopping list
- 2 eggs shopping list
- 1pkg shopping list
- 1 (3.4oz)instant pistachio pudding mix shopping list
- 6 drops green liquid food coloring,optional shopping list
- 1 cont.(15 oz) classic vanilla frosting1tsp almond extract shopping list
- chopped pistachios for garnish shopping list
How to make it
- Preheat oven to 350. Line 24 muffin cups with liners. In food processor,gring pistachios;reserve.
- On med speed,beat cake mix,11/3 c water,eggs and pudding mix 2 mins. Stir in nuts and if desired,food coloring. Divide among liners. Bake 20-22 mins. Transfer to racks,cool.
- Mix frosting and extract'spread over cupcakes. If desired,garnish with chopped nuts.
