Baked Penne

- 1 lb italian sausage shopping list
- 1 medium onion, chopped shopping list
- 3 large cloves garlic, chopped shopping list
- 28 oz can diced, peeled tomatoes shopping list
- 1/4 cup pesto sauce shopping list
- 1 lb penne or ziti pasta shopping list
- 1 package frozen chopped spinach, drained and squeezed shopping list
- 6 oz mozzarella cheese, grated shopping list
- 1 cup parmesan cheese, grated shopping list
How to make it
- In sauce pan, cook sausage, onion and garlic until sausage is cooked thoroughly. Add tomatoes with juice. Simmer until thick, about 10 minutes. Add pesto and salt and pepper to taste. In large bowl, combine pasta, spinach, mozzarella cheese, and 1/3 of parmesan. Stir in hot tomato sauce. Pour into oiled casserole dish. Sprinkle remaining parmesan on top. Bake at 375 degrees for 45 minutes with foil, removing foil for the last 10-15 minutes.
