Fresh Berries and Cream Salad Squares

- 1 cup boiling water shopping list
- 3 ounce package raspberry gelatin shopping list
- 3/4 cup cold water shopping list
- 1/4 teaspoon finely shredded lemon peel shopping list
- 2 tablespoons lemon juice shopping list
- 3/4 cup fresh red raspberries shopping list
- 3/4 cup fresh blueberries shopping list
- 2/3 cup whipping cream shopping list
- 4 ounces cream cheese softened shopping list
- 1/3 cup sifted powdered sugar shopping list
- 1/4 cup chopped sliced almonds or pecans toasted shopping list
How to make it
- Stir boiling water into gelatin for 2 minutes then stir in cold water and lemon juice.
- Chill until partially set then stir berries in and pour mixture into baking dish and chill until firm.
- Beat whipping cream just until soft peaks form then add cream cheese and powdered sugar.
- Beat until fluffy then stir in lemon peel then carefully spoon cream cheese mix over berry mix.
- Spread to edge of dish then cover and chill at least 6 hours.
- Top with nuts just before serving.
