How to make it

  • Brown bison in skillet on medium heat.
  • Dice onions and add to skillet.
  • Cook for approx. 10 minutes until bison is well done.
  • Add gravy to meat until desired thickness is achieved.

  • Meanwhile, peel potatoes and cut into small pieces.
  • Place in cold water (add a sprinkle of salt) and boil on high heat.
  • Cook until soft then drain.
  • Add butter and vegetable stock (more if desired) then mash to desired consistency. Set aside.

  • Prepare stuffing as per directions on box. Set aside.
  • ***
  • In a mixing bowl, combine frozen corn with cream style corn. Stir until well mixed. Set aside.
  • ***
  • Brush olive oil on all sides of casserole dish (9x13).
  • Spread stuffing mixture evenly over entire bottom of dish with fingers or wooden spoon.
  • Then layer meat mixture and then the corn mixture.
  • Finally, spread the mashed potatoes evenly over entire dish.
  • Lightly brush olive oil over top.
  • Garnish with parsley.
  • Bake at 350F for 20 minutes or until top is golden brown.
  • Serve with gravy and enjoy!
  • Cook ahead of time and save time! Simply wait for casserole to cool off, cut into individual size portions and store in freezer.
