Northern Style Sheppards Pie Recipe

Ingredients
  • 2 pounds of Fresh Ground Bison
  • 8-10 Red Potatoes
  • 1/2 White Onion
  • 1/2 cup Vegetable Stock
  • 1 can (14 oz) Cream Style Corn
  • 1/2 pkg. (1 kg) Frozen Corn Niblets
  • 2 boxes Stuff n Such Stuffing (or other fav brand)
  • 2 tbsp. Olive Oil
  • 2 tbsp. Butter
  • Brown Gravy

Directions
  1. Brown bison in skillet on medium heat.
  2. Dice onions and add to skillet.
  3. Cook for approx. 10 minutes until bison is well done.
  4. Add gravy to meat until desired thickness is achieved.
  5. ***
  6. Meanwhile, peel potatoes and cut into small pieces.
  7. Place in cold water (add a sprinkle of salt) and boil on high heat.
  8. Cook until soft then drain.
  9. Add butter and vegetable stock (more if desired) then mash to desired consistency. Set aside.

  11. Prepare stuffing as per directions on box. Set aside.
  12. ***
  13. In a mixing bowl, combine frozen corn with cream style corn. Stir until well mixed. Set aside.
  14. ***
  15. Brush olive oil on all sides of casserole dish (9x13).
  16. Spread stuffing mixture evenly over entire bottom of dish with fingers or wooden spoon.
  17. Then layer meat mixture and then the corn mixture.
  18. Finally, spread the mashed potatoes evenly over entire dish.
  19. Lightly brush olive oil over top.
  20. Garnish with parsley.
  21. Bake at 350F for 20 minutes or until top is golden brown.
  22. Serve with gravy and enjoy!
  23. Cook ahead of time and save time! Simply wait for casserole to cool off, cut into individual size portions and store in freezer.
