  • 1 celery rib, chopped
  • 1 garlic clove, minced
  • 1/4 cup butter or margarine
  • 1 tablespoon all-purpose flour
  • 8 ounces plain or Mexican-flavored process American cheese, cubed, divided
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained

instead of gr. beef...use gumbo size shrimp, crawfish and crab meat. also try a bag of freeze dried shrimp. they bring out the flavor big time. forget just 1 clove of garlic..us cajuns are not finicky with the garlic!! try it, you'll like it. and use tony's!!!!
