Beefy Bell Pepper Casserole

- 1 lb. of lean ground sirloin shopping list
- 1/2 medium onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 1 tsp. anchovy paste (optional) shopping list
- 2 tsp. capers shopping list
- 1/2 tsp nutmeg shopping list
- 1 14 oz can stewed tomotoes, pureed shopping list
- 1/2-1 cup water shopping list
- 1 cup instant brown rice, cooked shopping list
- 2-3 large bell peppers, coarse chopped shopping list
- 1 cup torn basil leaves shopping list
- 2 cups Monterrey Jack cheese, divided use shopping list
How to make it
- Preheat Oven to 350 degrees and grease 2 quart casserole.
- In large skillet brown lean ground sirloin with onion and garlic until no longer pink. Drain well, if necessary and return to skillet. Stir in pureed tomatoes, water, anchovy paste (if using) capers and seasonings. Simmer covered for 10 minutes, Stir in torn basil leaves and cooked rice.
- In a 2 quart greased casserole, spoon 1/2 of meat mixture onto bottom of dish, top with 1/2 of bell pepper chunks and 1 cup cheese. Repeat layering and top with remaining cheese.
- Bake until heated through and cheese is melted.

This sounds FABULOUS! I have a tube of anchovy paste I've been wanting to try, but the hubs said he won't eat anything I put it in. He loves green peppers and burger, so I bet I could sneak it in and he'd never notice. BUWAHAHAHAHA (evil laughter)...more
