Lemon Pudding Cake

- lemon Pudding cake shopping list
- 1 egg, separated shopping list
- 1/2 c. sugar shopping list
- 1/3 c. milk shopping list
- 2 T. all-purpose flour shopping list
- 2 T. lemon juice shopping list
- 1 t. grated lemon peel shopping list
- 1/8 t. salt shopping list
- whipped cream, optional shopping list
- In a mixing bowl, beat egg yolk. Add sugar, milk, flour, lemon juice, peel and salt; beat until smooth. shopping list
- Beat egg white until stiff peaks form; gently fold into lemon mixture. shopping list
- Pour into two ungreased 6-oz. custard cups (cups will be very full). shopping list
- Place the cups in an 8-in. square baking pan. Pour boiling water into pan to a depth of 1 in. shopping list
- Bake at 325 for 40-45 min. or until a knife inserted comes out clean and top is golden. Serve with whipped cream if desired. shopping list

My hubby and I eat a lot so I doubled the recipe and made it in a small casserole. It still only took 45 minutes to bake and was great-- a fluffy cakey top and lots of lemony goo. My 5!
