Gluten Free Strawberry Muffins

- 1-3/4 cups G.F. flour shopping list
- 1 level tsp xanthan gum shopping list
- 3/4 cup sugar shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp ground nutmeg shopping list
- 2 eggs, lightly beaten shopping list
- 1/2 cup fat-free plain yogurt shopping list
- 1/4 cup butter or stick margarine, melted and cooled shopping list
- 1 tsp vanilla extract shopping list
- 1-1/4 cups coarsely chopped fresh or frozen unsweetened strawberries shopping list

- 6 cups of white rice flour shopping list
- 2 cups tapioca flour shopping list
- 1 cup potato starch flour shopping list

How to make it
- In a bowl, combine the first four ingredients
- In another bowl, combine the eggs, yogurt, butter and vanilla; mix well
- Stir into the dry ingredients just until moistened
- Fold in strawberries
- Fill muffin cups coated with non-stick cooking spray or lined with paper liners two-thirds full
- Bake at 375 F. for 15-18 minutes or until a toothpick comes out clean
- Cool for 5 minutes before removing from pan to a wire rack
- Serve warm
- Yield: 1 dozen.
