How to make it

  • preheat oven 400 degrees
  • Pat chicken dry with paper towels
  • inject both breasts and legs with injection marinade
  • mix creole season and cayenne
  • use half of mixture to rub under skin on the breast
  • Rub butter on skin
  • sprinkle rest of season mixture on skin
  • place in roasting bag
  • put in oven and cook until liquid runs clear
  • if you like a crispier skin cut bag open and roast about 10 minutes longer.
