Veggie Mac N Cheese

- 1 1/2 cups uncooked elbow macaroni shopping list
- 1 16oz bag of California medley shopping list
- 2 celery ribs, sliced shopping list
- 1 med onion, chopped shopping list
- 1 tablespoon butter shopping list
- 1/4 c flour shopping list
- 1 c milk shopping list
- 1 c chicken broth shopping list
- 12 oz shredded cheddar cheese shopping list
- 1 tablespoon Dijon mustard shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1/4 teaspoon paprika shopping list
How to make it
- Cook macaroni
- add medley during last 6 minutes of macaroni cooking
- Drain
- Transfer to a greased 13X9 dish
- Meanwhile saute onion in butter until tender
- sprinkle with flour
- stir until blended
- Gradually stir in milk, and broth
- Bring to boil
- cook and stir for 2 minutes or until thickened
- Stir in cheese, mustard, S & P
- Pour over macaroni mix
- Stir to coat
- Sprinkle with paprika
- Bake, uncovered at 350 for 15-20 minutes
