Ingredients

500g (1 lb) cauliflower, coursely chopped

1/2 medium red onion, sliced

2 tsp garlic, minced

2 tbsp Two Wheeler Creek Lemon Myrtle Liqueur (Subsitute 1 tbsp lemon juice and 1 tbsp white wine)

cayenne pepper

cumin

salt

Directions

Chop and slice the cauliflower and onion and place in a microwave-safe bowl, cover with plastic wrap and microwave-steam until cauliflower is tender.

While the vegetables are cooking, blend remaining ingredients into a glaze.

Carefully, avoiding steam burns, remove plastic wrap from the cauliflower bowl.

Drizzle lemon myrtle glaze over cooked vegetables, stir, then re-cover and allow to continue steaming for another minute or two.

Serve with a slotted spoon to avoid overpowering the dish with remaining liqueur glaze.
