Another dish I came up with an Indian flavor but one can use any spice they desire for this nut and vegetable, rice mixture .

Ingredients
  • 2 cups og raw brown rice
  • 5 to 6 cups of water or vegetable broth
  • 1 cup cooked peas and carrots
  • 1/2 cup slivered almonds
  • 1/4 to 1/2 cup dark and light raisins
  • 1 to 2 tsp Chaat Masala Indian seasoning ( has cinnamon, cumin, cloves, etc etc. ) or any seasoning as desired
  • salt and pepper to taste

Directions
  1. Cook rice per package instructions until tender.
  2. Drain rice and rinse off when tender
  3. Mix in the almonds, peas and carrots and raisins.
  4. Season to taste as desired.
  5. Pack into a round casserole dish, unmolding unto platter if desired.
