Sharons Pork Tenderloin Recipe
A flavorful way to cook pork tenderloin! The breadcrumbs seal in the juices, so it doesn't dry out even if you overcook it a bit!

Ingredients
  • 1 pork tenderloin (1-2 pounds)
  • 1 cup seasoned bread crumbs (more or less as needed)
  • 1/4 cup dijon mustard (more or less as needed)

Directions
  1. Preheat oven to 425
  2. Coat entire pork tenderloin with dijon mustard
  3. Roll coated tenderloin in breadcrumbs to coat entire surface
  4. Place on rack in shallow baking pan
  5. Bake in preheated oven 35-40 minutes, or until crumbs are browned and meat is cooked to 165 degrees. If crumbs get too browned before pork is fully cooked, turn tenderloin as needed or loosely cover with foil.
