South Of The Border Squash Recipe
This is an incredible squash recipe that is always well received when I make it at home or take it to potlucs. The squash lovers in your life will thank you for this delight. Enjoy

Ingredients
  • 2 pounds yellow squash sliced
  • 2 cups crushed tortilla chips
  • 1 can condensed cheese soup undiluted
  • 1 can cream of mushroom soup condensed undiluted
  • 4-1/2 ounce can chopped green chilies
  • 1/4 cup chopped white onion
  • 2 large eggs lightly beaten
  • 2 tablespoons taco seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 4 slices bacon cooked and crumbled

Directions
  1. Cover and cook squash in small amount of boiling water in medium saucepan 8 minutes.
  2. Drain well then press squash between paper towels to remove excess moisture.
  3. Combine squash, tortilla chips and next 6 ingredients stirring gently.
  4. Spoon into a lightly greased rectangular baking dish.
  5. Sprinkle evenly with cheese and bacon then bake at 450 for 30 minutes.
