South of the Border Squash

- 2 pounds yellow squash sliced shopping list
- 2 cups crushed tortilla chips shopping list
- 1 can condensed cheese soup undiluted shopping list
- 1 can cream of mushroom soup condensed undiluted shopping list
- 4-1/2 ounce can chopped green chilies shopping list
- 1/4 cup chopped white onion shopping list
- 2 large eggs lightly beaten shopping list
- 2 tablespoons taco seasoning mix shopping list
- 1 cup shredded sharp cheddar cheese shopping list
- 4 slices bacon cooked and crumbled shopping list
How to make it
- Cover and cook squash in small amount of boiling water in medium saucepan 8 minutes.
- Drain well then press squash between paper towels to remove excess moisture.
- Combine squash, tortilla chips and next 6 ingredients stirring gently.
- Spoon into a lightly greased rectangular baking dish.
- Sprinkle evenly with cheese and bacon then bake at 450 for 30 minutes.
