CHERRY TOMATOES IN BROWN BUTTER SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bowers Estate in Fort Worth, Texas in 1994.

Ingredients
  • 3 tablespoons butter
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon dried tarragon
  • 1 pint cherry tomatoes

Directions
  1. Melt butter over low heat then let cook until browned stirring constantly.
  2. Add remaining ingredients then cook 3 minutes stirring constantly.

I made this the other night and it went very well as a side next to honey dijon chicken! The lemon and butter outer coat of flavor with the ooze of warm tomato pulp is amazing.
