Hot Chili Basted Corn Bones Recipe
HOT CHILI BASTED CORN BONES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bowers Estate in Fort Worth, Texas in 1994.

Ingredients
  • 6 tablespoons olive oil
  • 2 tablespoons chipped fresh cilantro
  • 1 tablespoon tomato paste
  • 2 tablespoons hot chili sauce
  • 4 corn on the cob husks removed
  • Butter
  • Fresh cilantro leaves

Directions
  1. Whisk oil, cilantro, tomato paste and chili sauce in a bowl.
  2. Cut each corn cob into three sections and blanch in a pot of boiling water 2 minutes.
  3. Drain then place in a shallow dish and pour marinade over corn to coat well.
  4. Cover and allow sit 2 hours.
  5. Grill the corn on a hot barbecue for 30 minutes regularly turning and brushing with marinade.
  6. Serve hot topped with butter and marinade and garnished with cilantro leaves.
