Apple Pecan French Toast Recipe
From our local newspaper. A delicious oven french toast that you make ahead and refrigerate overnight. Just bake it in the morning. Convenient and great for brunch!

Ingredients
  • 4 eggs
  • 1 c. milk
  • 1/4 c. sugar
  • 1/4 tsp. cinnamon
  • 1 med. apple, peeled and grated
  • 1/2 tsp. vanilla
  • 1 french baguette, sliced one inch thick
  • 1/2 c. pecans, chopped
  • 2 TBSP. butter, melted

Directions
  1. THE DAY BEFORE:
  2. Mix all ingredients except bread, pecans, and butter in a bowl.
  3. Coat bottom of a 13" x 9" glass baking dish with cooking spray or butter. Place bread in a single layer in dish.
  4. Pour the egg mixture over the bread. Turn bread to coat other side. Cover and refrigerate overnight.
  5. DAY OF:
  6. Preheat oven to 425 degrees F.
  7. Sprinkle chopped pecans over bread and drizzle with melted butter.
  8. Bake 20 - 25 min. or until puffy and golden.
  9. Serve with maple syrup.
