Limed Snapper Recipe
LIMED SNAPPER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Riley Estate in Dallas, Texas in 1991.

Ingredients
  • 1/3 cup chopped scallions
  • 2 tablespoons butter
  • 2 chopped ripe tomatoes
  • 3 tablespoons fresh lime juice
  • 2 tablespoons chopped green chilies
  • 1 tablespoon chopped parsley
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic salt
  • White pepper
  • 1 pound red snapper fillets
  • Lime wedges

Directions
  1. Sauté' scallions in butter until tender.
  2. Add remaining ingredients except snapper and lime wedges then bring to boil.
  3. Reduce heat and simmer 10 minutes.
  4. Put snapper in sauce then spoon over fish.
  5. Cover and simmer 10 minutes longer.
  6. Serve on heated platter surrounded by lime wedges.
