Limed Snapper

- 1/3 cup chopped scallions shopping list
- 2 tablespoons butter shopping list
- 2 chopped ripe tomatoes shopping list
- 3 tablespoons fresh lime juice shopping list
- 2 tablespoons chopped green chilies shopping list
- 1 tablespoon chopped parsley shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon garlic salt shopping list
- white pepper shopping list
- 1 pound red snapper fillets shopping list
- lime wedges shopping list
How to make it
- Sauté' scallions in butter until tender.
- Add remaining ingredients except snapper and lime wedges then bring to boil.
- Reduce heat and simmer 10 minutes.
- Put snapper in sauce then spoon over fish.
- Cover and simmer 10 minutes longer.
- Serve on heated platter surrounded by lime wedges.
