TURKEY CURRY BOMBAY This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clinton Estate in Mesquite, Texas in 1988.

Ingredients
  • 1/4 cup butter
  • 2 cups cooked and cubed turkey
  • 1 medium onion minced
  • 1 tablespoon curry powder
  • 1/4 cup chutney
  • 1/4 cup sherry
  • 2 avocados halved seeded and peeled
  • 4 slices bacon cooked and crumbled
  • 1/2 cup peanuts
  • Bombay Sauce:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 cup shredded cheddar cheese

Directions
  1. Melt butter in a medium frying pan.
  2. Sauté turkey and onion until lightly browned.
  3. Add curry powder then continue to sauté.
  4. Stir in chutney and sherry.
  5. To make sauce melt butter in saucepan then add flour, pepper, paprika and salt.
  6. Mix well then whisk in milk until smooth and cook over low heat until bubbly.
  7. Stir in cheese then pour sauce into turkey mixture and place over low heat to warm through.
  8. Spoon into each avocado half and garnish with bacon and peanuts.
