Turkey Curry Bombay

- 1/4 cup butter shopping list
- 2 cups cooked and cubed turkey shopping list
- 1 medium onion minced shopping list
- 1 tablespoon curry powder shopping list
- 1/4 cup chutney shopping list
- 1/4 cup sherry shopping list
- 2 avocados halved seeded and peeled shopping list
- 4 slices bacon cooked and crumbled shopping list
- 1/2 cup peanuts shopping list
- Bombay Sauce: shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons flour shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 teaspoon paprika shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup milk shopping list
- 1 cup shredded cheddar cheese shopping list
How to make it
- Melt butter in a medium frying pan.
- Sauté turkey and onion until lightly browned.
- Add curry powder then continue to sauté.
- Stir in chutney and sherry.
- To make sauce melt butter in saucepan then add flour, pepper, paprika and salt.
- Mix well then whisk in milk until smooth and cook over low heat until bubbly.
- Stir in cheese then pour sauce into turkey mixture and place over low heat to warm through.
- Spoon into each avocado half and garnish with bacon and peanuts.
