Ingredients
  • 24 Oysters(6 per person)
  • 1/2 Cup Cooked Broccoli,pureed
  • 1/2 Cup Parsley,pureed
  • 1 Cup Green Onion Tops,pureed(do not use whole onion)
  • 1/4 Cup Cooked Spinach,pureed
  • 1/4 Cup Celery Stalks,pureed
  • 1/2 Cup Cooked Leaf Lettuce,pureed
  • 3 Tablespoons Butter,melted
  • 2 Cloves Garlic,minced fine
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Cayenne Pepper
  • 1 teaspoon Anise Flavoring(no tarragon or absinthe is used)
  • 1/2 Cup Bread Crumbs

Directions
  1. Wash oysters in fresh water,dry thoroughly,(they must be dry)
  2. Place oysters in half of shell,placed in pan on top of rock salt.
  3. Being very sure all the water has be drained from the broccoli,spinach,lettuce,etc.You must not have any excessive liquid of any kind.
  4. Place all the sauce ingredients in a blender,starting with the melted butter.
  5. Place about 1/2 " of sauce over each oyster in the shell.
  6. Sprinkle the top of the sauce heavily with the bread crumbs.
  7. Place in an oven at 400 degrees and broil for about 4 to 5 minutes or until the bread crumb begin to brown.DO NOT BAKE.
  8. You must broil this dish.
  9. Remove and serve
  10. Note: this is a very bright green sauce,flavorful
