I got this recipe from a lady who we called Mom Bailey. A mom away from home. She first adopted my husband then myself. She always made this on special occasions Still haven't figured if it is to be eaten with the meal or after for dessert.

Ingredients
  • 2 cups drained cooked elbow Macaroni ( 1 cup uncooked)
  • 1 can chunk pineapple (drained)
  • 6 apples peeled and chopped
  • 1 can Mandarins (opt)
  • Sauce:
  • 4 eggs
  • 2 cups icing sugar
  • 1/2 cup lemon juice
  • 1 pint whipping cream

Directions
  1. Combine Macaroni, pineapple, mandarins and apples set aside
  2. Cook eggs sugar and juice until thick Looks like lemon pie filling
  3. Fold into apple mixture after cooled, Keep cold
  4. Just before serving whip the cream and fold into the cold macaroni mixture
