How to make it

  • Pre-heat oven to 180 degrees celcius.
  • Prepare two bread tins 21x11x7 cm by smearing insides with butter or spraying it with cooking spray.
  • Pour the boiling water over the brown sugar and stir until sugar is disolved.
  • Add the bran and mix well - let the mix cool down.
  • Mix the rest of the ingredients and add to the bran mix.
  • Mix all the ingredients well and dish into the prepared bread tins.
  • Bake 1 hour or untill cooked - as ovens are different I have found that I needed to bake the breads a bit longer. Use a skewer or test needle to make sure that the bread is cooked right through.
  • Tip: After about 20 minutes cover the bread with aluminium foil to prevent it from baking too dark.
  • Turn out the breads onto a cooling rack to cool down.
  • Makes 2 small loaves
