Faux Italian Chicken Bake Recipe
This dish is versatile- all root vegetables work well. Add more or less of any of the seasonings, but be generous overall- this recipe can take it. I call it faux Italian because aside from the dressing it's continental.

Ingredients
  • 2 lbs mixed chicken parts, skin on
  • 3 carrots, coursley chopped
  • 1 large yellow onion, coursley chopped
  • 1 parsnip, coursley chopped
  • 4 baking potatoes, unpeeled, coursley chopped
  • 1 bunch celery, coursley chopped
  • 1Tbsp chopped garlic
  • 3 Tbsp garlic powder
  • 3-4 Tbsp dried oregano
  • 2 Tbsp black pepper
  • 1/2 to 3/4 large bottle zesty Italian dressing
  • 8-10 peperoncini peppers
  • 1 small can sliced black olives

Directions
  1. Preheat oven to 400
  2. Add all veggies & chicken to large roasting pan
  3. Sprinkle oregano, black pepper & oregano, mix to coat
  4. Pour dressing over all, make sure use enough to coat all pieces
  5. Cook covered for 45 minutes
  6. Remove cover.
  7. Add peperoncini & olives. Stir to mix.
  8. Bake uncovered 15 more minutes or until potatoes are tender but still slightly firm.
