Boneless Chicken Breasts With Grapes Recipe
BONELESS CHICKEN BREASTS WITH GRAPES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 3 whole boneless skinless chicken breasts
  • Salt and freshly grated nutmeg as needed
  • 2 tablespoons butter
  • 1 tablespoon orange marmalade
  • 1/4 teaspoon dried tarragon
  • 1 green onion thinly sliced
  • 1/3 cup dry white wine
  • 1 cup seedless grapes
  • 1/4 cup whipping cream

Directions
  1. Sprinkle chicken breasts with salt and nutmeg.
  2. In large frying pan heat butter over medium high heat and brown chicken lightly.
  3. Add marmalade, tarragon, green onion and wine then cover reduce heat and simmer 10 minutes.
  4. Add grapes then cover again and continue cooking 10 minutes.
  5. Using a slotted spoon remove chicken and grapes to heated serving dish and keep warm.
  6. Add cream to liquid in pan then bring to boil stirring constantly.
  7. Cook until sauce is reduced and slightly thickened then salt to taste and pour over chicken.
