Ingredients
  • 3 pounds chicken pieces (or 6 boneless chicken breast)
  • 1/4 cup flour.
  • 2 tablespoons oil
  • 1 small can sliced mushrooms (drain and reserve liquid)
  • 1 can chopped tomatoes
  • 1/3 cup soy sauce
  • 1 clove minced garlic
  • 1 medium onion (sliced thinly)
  • 1/4 cup sliced black olives
  • 3 cups cooked rice

Directions
  1. Coat chicken with flour
  2. Heat oil in large frying pan
  3. Brown chicken in oil
  4. Mix mushroom liquid, tomatoes, soy sauce, and garlic
  5. Add liquid and onions to chicken
  6. Simmer 45 minutes or until chicken is done
  7. Add mushrooms and olives
  8. Heat thoroughly
  9. Serve over rice
