Orecchiette With Turkey Sausage And Broccoli Rabe Recipe
This tasty pasta dish is a real crowd pleaser! Best when served fresh and the broccoli rabe and sausage are nice and crisp. Edited from Giada's original recipe.

Ingredients
  • 1 lb pasta (orecchiete or shells work best)
  • 2 bunches broccoli rabe, stems trimmed
  • 3 tbsp extra virgin olive oil
  • 1 lb turkey Italian-style sausage, casings removed
  • 3 cloves garlic, minced
  • handful of sun-dried tomatoes
  • 1 onion, chopped
  • juice from one lemon
  • dash of crushed red pepper flakes
  • 1/4 c grated Parmesan

Directions
  1. Cook broccoli rabe in large pot of boiling salted water until crisp and tender, about 1 minute.
  2. Transfer to a large bowl of ice water (save the cooking water)
  3. Bring reserved cooking water back to a boil and add pasta; cook until al dente
  4. Heat oil in skillet over medium heat
  5. Add sausage and cook, breaking it into pieces with a spoon, about 12 minutes
  6. Add garlic, onions, sun-dried tomatoes, crushed red pepper flakes, and lemon juice. Saute mixture for 2-3 minutes.
  7. Strain broccoli and add to pan; toss to coat.
  8. Add pasta to skillet.
  9. Stir in Parmesan and serve immediately.
