Orecchiette with Turkey Sausage and Broccoli Rabe

- 1 lb pasta (orecchiete or shells work best) shopping list
- 2 bunches broccoli rabe, stems trimmed shopping list
- 3 tbsp extra virgin olive oil shopping list
- 1 lb turkey Italian-style sausage, casings removed shopping list
- 3 cloves garlic, minced shopping list
- handful of sun-dried tomatoes shopping list
- 1 onion, chopped shopping list
- juice from one lemon shopping list
- dash of crushed red pepper flakes shopping list
- 1/4 c grated Parmesan shopping list
How to make it
- Cook broccoli rabe in large pot of boiling salted water until crisp and tender, about 1 minute.
- Transfer to a large bowl of ice water (save the cooking water)
- Bring reserved cooking water back to a boil and add pasta; cook until al dente
- Heat oil in skillet over medium heat
- Add sausage and cook, breaking it into pieces with a spoon, about 12 minutes
- Add garlic, onions, sun-dried tomatoes, crushed red pepper flakes, and lemon juice. Saute mixture for 2-3 minutes.
- Strain broccoli and add to pan; toss to coat.
- Add pasta to skillet.
- Stir in Parmesan and serve immediately.
