This fish batter is perfect for coating any type of fish before deep frying for a scrumptious Fish and Chips dish.

Ingredients
  • 1 1/2 cup white flour
  • 2 1/2 tsps baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • pinch sugar
  • 1 tsp fresh, finely cut-up chives or dried chives
  • 1 1/4 cup water
  • 1 tsp vinegar

Directions
  1. Mix dry ingredients and stir in the water. The batter will be quite thick.
  2. Just before you are ready to dredge the fish in the batter, add the vinegar and stir well. The batter will puff right up and is ready to be used. Immediately dip the fish pieces into the batter, remove excess batter and deep fry in hot oil in a deep fryer at 350 degrees until the batter is golden brown, crispy and the fish is cooked, about 8 to 10 minutes depending on the thickness of the fish. Serve with homemade french fries and coleslaw. Yummy!
