Couscous chickpea And Tuna Salad

- 2 tsp oil shopping list
- 1 punnet cherry tomatoes halved shopping list
- 1 cup couscous shopping list
- 1 cup water boiled shopping list
- 80g baby spinach shopping list
- 400g drained chickpeas shopping list
- 185g tuna in oil drained and flaked shopping list
- 90g feta cheese crumbled shopping list
- 1/3 cup pitted kalamata olives sliced shopping list
- DRESSING shopping list
- 2 tblsp olive oil shopping list
- 1 tblsp balsamic vinigar shopping list
- 2 tblsp maple syrup shopping list
How to make it
- Heat oil in med.fry pan on high.Add tomatoes cook 1-2 min until tender,transfer to plate
- Place couscous in large bowl cover with water.ste aside for about 5 mins. until liquid is absorbed, fluff with fork
- DRESSING
- Whisk together all ingrediants in a jug and season to taste
- Toss spinach,chickpeas,tuna,feta and olives through the couscous, along with the tomatoes and dressing
- Serve with crusty bread
