Tomato Soup with Tortellini

- 1 cup chopped onion shopping list
- 1 tablespoon olive oil shopping list
- 2 lbs. ripe tomatoes (6 medium), peeled, seeded and chopped shopping list
- 1-1/2 cups chicken broth shopping list
- 1-1/2 cps water shopping list
- 1-8 oz can tomato sauce shopping list
- 1 teaspoon dried sage, crushed shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 4 oz. cheese tortellini, cooked and drained shopping list
- parmesan cheese for garnish shopping list
How to make it
- In a Dutch oven, cook onion in hot oil until tender (not browned).
- Stir in tomatoes, chicken broth, water, tomato sauce, sage, salt and pepper.
- Bring to a boil, reduce heat. Cover and simmer about 30 to 35 minutes.
- Remove from heat and cool slightly.
- Place 1/2 of mixture at a time into a blender and blend until smooth. Repeat with remaining mixture.
- Return to saucepan. Stir in cooked tortellini, heat through.
- Garnish with parmesan cheese .
